This post is NOT sponsored by Appleton Estate or Captain Morgan, I just happened to like to bake/cook with a nice rum, and of course, have it over some ice mixed with a lil’ soda occasionally! Now, onto prepping the raisins!

Yes, my dear reader!!! The second part (and arguably the most important part ) of this rum cake recipe are the ginger components. I used grated ginger, ginger powder, AND candied ginger in this cake. ….. so yeah.. when I say you should love ginger and rum flavors to enjoy this cake, I’m pretty serious. Instructions: Combine spiced rum, ginger ale, and lime juice in a glass with ice. Stir and garnish with a lime wedge. Also known as golden rum or añejo, aged rum has an intense depth in flavor. It can have notes of vanilla, coconut, almond, citrus, or caramel. The aged rum that we used here was Brugal Añejo Rum. Rum and ginger ale is the perfect combination! This refreshing spin on the Dark and Stormy has a subtler ginger flavor.In a small bowl, combine the baking soda and hot water, very well. Add this mixture to the flour mixture, along with the molasses mixture. Fold in the soaked but drained raisins and mix together until well combined. Try dopping some finely chopped candied ginger on the bottom of the pan so that as it’s baking, the cake will be “topped” with the candied ginger.

Dark rum is tasty as well.Dark rum is aged as well and has a deep, caramel flavor and sometimes notes of cinnamon and spices. It also makes a very tasty Rum and Ginger Ale. You want those raisins to become big and fat by being rehydrated with you’re favorite rum. Personally, I like a nice spiced rum by Captain Morgan, or, Appleton Rum. It’s a Jamaican rum, and let me tell you – those guys know how to make rum the right way. There’s nothing inherently spooky about this drink but I guess you could close your eyes and imagine yourself down in the coal pits. That’s pretty scary.
